Imitation crab ceviche

One of my favorite seafood dishes is imitation crab ceviche. I know, I know, it’s not really seafood if it’s imitation crab.  Each person in my family orders a different dish, so I normally take a bite from each. This time it was this ceviche. Friday night is usually the day we eat out, but this time I decided to do the ceviche at home. I grew up eating seafood. Maybe we didn’t eat it every day or every weekend, but we did every so often. I couldn’t wait to eat when my mom used to tell us she was making imitation crab ceviche.  Till this day, I can’t wait to eat this type of ceviche. When I know I’m going to be eating that, I save my appetite so that I can enjoy it and eat plenty of it. I like to top it with avocado when possible. This dish includes grated carrot, red onion marinated in lime juice with salt, cilantro, and cucumber. I make a spicy green salsa on the side with fresh serrano peppers, lime juice, and salt. Put it in the blender and it’s ready to be tasted. It normally turns out to be really spicy, but that’s what gives imitation crab ceviche the flavor I look forward to tasting. 

Eating out for vegetarians

I often get asked if it is difficult eating out, being a vegetarian. The answer is no. I have had no problems finding something tasty and healthy. In any case,  here is one example: Ruby’s has various choices. Today,  I had breakfast. I just substituted the meat for a veggie sausage. There. No meat. I eat smaller portions, as my wife does. We split this plate and felt more than satisfied. I will ask for vegetarian options and find that restaurants are very accommodating.

Norooz is the local Persian restaurant in Wilmington,California. It serves both Persian and Italian food. It has become the one restaurant that I can count on to cater to both mines and my children’s food preference. My husband and I love Persian food. My son and daughter love Italian food. My favorite food on their menu is the Beef Kabob with Basmati rice. Persian food is full of flavor,especially the rice. I love the rice.

  Good evening everyone, my name is Gisela and I am a junior at CSUDH. My goal is to graduate by 2019. My major is IDS with a minor in Labor Studies. This is my second semester and so far, it has been an exciting journey.

 

I have three different type of favorite foods. One of my favorite is tamales during Christmas with Atole de Nuez. During the summer, I love seafood and I love Menudo Blanco all year around for breakfast.

 

I took my first food selfie today it was very exciting. I had shrimp with spicy cilantro sauce for lunch. It was very delicious. My plate also included rice and bean and of course handmade tortillas. I had an amazing lunch with my fellow coworkers.

I am a Junior at CSUDH and very excited to see what the new year brings. This seems to be a fun class, I have never blogged before and never thought I ever would. So this is a great experience so far.

This selfie is a lunch date with my girlfriends at one of our favorite restaurants named Los Compadres. It has become one of my favorite dishes, enchiladas de queso. Although I pride my self on my cooking, I have yet to make a great enchilada. Enchiladas are normally semi-fried tortilla dipped in red chili sauce with added Monterrey jack cheese inside. Served with beans, rice, and my favorite sour cream!!

Hello my fellow Toros!

I am Alethia, I am a Junior my 2nd semester in the IDS: Comparative Cultures program, my goal is to complete my Bachelors degree by Summer 2019 with hopes of continuing on to graduate school for my Masters in Social Work.

My first food selfie is my dinner: Large Shrimp with Crab Stuffing, baked in Garlic Butter, and Monterey Jack Cheese, Served with Jasmine Rice this week from Bubba Gump Shrimp in Long Beach.

My favorite foods are any seafoods mostly shellfish cooked various ways except, Lobster.  I love eating whole fish, yes with the head on (lol).  I also really love Mexican food, Enchiladas and Tamales are some of my go to foods.  I also love Italian food pasta is my Kryptonite.  I cook really good Chicken and Turkey Enchiladas my specialty dish at my families request.

I love to support street vendors of course the well kept locations.

I also love comfort foods like Salmon croquettes and smothered potatoes.  I look forward to all the food selfies and presentations, I am sure there will be some recipes that I can learn from and cook new foods and up my already good cooking skills.

Hi everyone, I’m Grace.

I am a Junior at CSUDH and hope to graduate by 2019. I am working really hard at it. This class is different from any other class I’ve taken before, starting with the blog. I’ve never blogged before, so hopefully I’ll do well. I will much appreciate all the help I can get from any of my classmates

The selfie on this blog is from my Monday night dinner: cheese enchiladas. I love cheese enchiladas more than any other type of enchiladas. It’s not complicated to do them and the results are delicious .  These enchiladas are “white” because as you can see, they are not dipped in any red or green sauce, they are just dipped in oil. Monterrey jack cheese is rolled inside. Once they are rolled, they are topped with shredded lettuce, grated carrots, red onion marinated in lemon with salt, sour cream, and grated fresh cheese.  Once all those toppings are piled on the enchiladas, I pour warm sauce made with fresh cooked tomatoes, oregano,  a garlic clove and chicken flavored tomato bouillon. After that, all I have left is to enjoy.

Good Day,

My name is Regina and I am a 50-year-old full-time student who works and volunteers. I am happy to say I received my AA from Los Angeles Harbor College this past year and I’m now attending CSUDH with the hopes of getting my BA degree within two years.

My food selfie is of a chili/cheese hot dog and chips.  I took this pic while having lunch with my sweetie pie (hubby) this past weekend. It’s not a food that I would normally eat because I’m not a fanatic of bread or hot dogs but I will eat things I don’t like because I love him.

Until this class I’ve never been asked about my favorite food. I know realize my tastes buds are all over the place. I don’t really care for cookies, cakes, or pies but I will cook them. I’m more of a meat eater. I’ll eat and/or try any type of meat except pork, not that I don’t like, it does not agree with my body.

Top of my food list is curry goat which is dish based out of Trinidad. This dish was first made for me by my first husband who would always tell us he cooks out of love. The goat meat is cooked with a pressure cooker. I’m sure this is what gives it such a great rich taste that allows the flavors to melt in my mouth. It’s served over a bed of rice or potatoes, I believe this is all just filler. I also love the taste of soul food dishes such as; collard greens and corn bread, black eyed peas and rice, and fried cabbage. All of these dished use a base made with smoked turkey meat and not the traditional smoked pork. The flavors and smell from these dishes remind me of my childhood. You see growing up we didn’t eat out much and my mother cooked every day. She showed us so much love that she would separate the dishes according to our different tastes. I couldn’t eat the dishes with pork so she would cook with turkey butts, my sister loved sweets so she would add a little sugar, as for my brother he ate everything not bolted down. These foods remind me of the happier times for my family and it saddens me to say that I rarely eat these things today except during the holidays.

A vegetarian breakfast

Hey there, my name is Gil Hurtado. I’m 57 years old, happily married to my wife Lily for 37 years. We have a son, John, who is a Crime Scene Investigator as well as a John Lennon in a Beatles tribute band. I have a daughter that has her Masters in Education and has been a school teacher for several years. I’ve been retired as a supervisor for the USPS. I’m a former Mayor for the city of South Gate as well as other appointed positions representing my city including being a delegate for the Democratic Party. I’m president of the largest youth program in SG. I coach girls softball and basketball at SGHS. I am now a Junior at CSUDH. I’ve completed nine marathons, participated on a game show, and just have respect and love of life. Graduation date goal is late 2019.

Here is a typical breakfast for me. 1 egg with Soy Chorizo. A side of avocado and a portion of beans. 1 waffle with strawberries. And of course, my first cup of coffee for the day.

Total calories 471, protein 20 grams, carbs 50 grams, fiber 13 grams. I’m a pescatarian and am careful with what I eat. I love food for its taste as well as its nutritional value.
