Hi

My name is Elizabeth Salgado, I am a IDS major and this is my third semester, I should be finished by fall of 2017, I can’t wait as I miss spending the extra time with my kids.   I am grateful for this program as it has allowed me to do it all; with kids and a full-time job I am happy the IDS program offers a flexible schedule.

I posted a McDonald’s food selfie because this pretty much represents my lifestyle  at the moment since  I am always on the go and because sometimes you just need it.  I know it’s bad for you, but it’s right there always available, less than five minutes away from where you live.

 

I enjoy all foods It’s really hard to pick just one, but I guess I will talk about one of my favorite foods.  My Aunt usually makes this dish around the holidays it is Posole.  Posole is made with beef or pork broth, a sliced onion and garlic for flavor. So it’s a soup with pork shoulder, white hominy and we add pigs feet. There is a red chili sauce that is added for color and flavor. Once you serve yourself a large bowl with your meats, it is optional to add radishes, sliced cabbage, onion, cilantro( I don’t like raw onion and cilantro so I leave it out) and limes lots of lime for me and a tostada on the side to dip into your Posole. This is a very hearty soup so it is very filling but I always manage to eat two large bowls.  On a cold winter day when you serve a steaming hot bowl of Posole celebrating the holidays with family it’s the best.

  1. Oh my gosh! This post strikes a chord within me because my mom often calls me her “Chicken Nugget Baby.” Both my siblings are over a decade older than me, so my mom always had me with her when we went to their sporting events. She was always so busy and tired from rushing them from one game to the next that oftentimes we would opt for a quick stop at the the drive-thru rather than eating food at home. I agree that it’s definitely not the healthiest, but I cannot deny the pleasure I get from a chowing down on a Happy Meal.
