Imitation crab ceviche

One of my favorite seafood dishes is imitation crab ceviche. I know, I know, it’s not really seafood if it’s imitation crab.  Each person in my family orders a different dish, so I normally take a bite from each. This time it was this ceviche. Friday night is usually the day we eat out, but this time I decided to do the ceviche at home. I grew up eating seafood. Maybe we didn’t eat it every day or every weekend, but we did every so often. I couldn’t wait to eat when my mom used to tell us she was making imitation crab ceviche.  Till this day, I can’t wait to eat this type of ceviche. When I know I’m going to be eating that, I save my appetite so that I can enjoy it and eat plenty of it. I like to top it with avocado when possible. This dish includes grated carrot, red onion marinated in lime juice with salt, cilantro, and cucumber. I make a spicy green salsa on the side with fresh serrano peppers, lime juice, and salt. Put it in the blender and it’s ready to be tasted. It normally turns out to be really spicy, but that’s what gives imitation crab ceviche the flavor I look forward to tasting.

  1. I haven’t had this in quite some time. I’ll have to put this on my list. I love these as tostadas. The fact that it’s imitation crab does not change that it’s delicious. It’s still real fish and real tasty. On those rare occasions when fish is on the menu, it must be something that I’m going to enjoy. This is on that list. Thanks for posting.
